4.5+ years after the prior: this has smoothed out absolutely beautifully, while retaining all of its lovely nutty/marzipan/bracing acidity characteristics. A pure and utterly distinctive joy over the course of four nights, gaining complexity along the way. We are so glad that we have one more, and will try to wait for a respectable number of years.

Luxuriant, nutty, rancio nose with candied citrus peel, savoury spice, marzipan, and chestnut honey. Taut on the palate. Monumental acidity, which balances sensations of candied citron, more marzipan, nuts, and iodine. Long, with a complex, multifaceted finish oscillating between the saline, the honeyed, and nutty components, each flowing seamlessly into the other. An outstanding food wine, which found a good match in Norwegian smoked salmon and Culatello. I can imagine this ageing well for another five or six decades. A serious, grown-up white wine.

Light golden. Typical bracing acidity, with a slightly creamy and round background of curry, old walnuts, and just a hint (pleasant) of bitterness. A touch of rusticity. This was lovely over 6 nights, meted out to accompany small portions of curried prawns or shrimp.

Millesime Bio Fair - Day 2 (Montpellier, France): Smells like nuts, hay, dried wax, lemon peel and white pepper. A complex mix of aromas. Full and waxy on the palate, complex, but full of fresh acid. Flavors of almond, lemon oil, sea brine and green olive combine in a unique package. Finish with notes of preserved lemon, nuts and graham cracker crust. Despite the oxidation, it's still fresh and subtle, and not overwhelming given this style. Delicious stuff, I'd love to cellar some for a decade to see what happens.
