1989 / 1990 Bordeaux Dinner (Jade Palace, Forum Galleria, Singapore): Unusual, but quite yummy. The nose had treacle and caramel apples and brioche. There was a sweetness on the palate to, with cider flavours along with a hint of roasted gingko nuts. It had a nice and creamy mousse along with a decent bit of acidity. All in, simple and a touch on the sweet side, but quite yummy.

Dinner with Bea & Gus (Crown Wine Cellars, 18 Deep Water Bay Drive, Shouson Hill, Hong Kong): Medium yellow gold. Lots of tiny bubbles. Nose is iron filings and ozone....with an almost custard element too. Palate is really dominant Epsom Salts and tons of petillance. Bright and austerely delineated but no over-acidity. Nice length. Could improve but I’m not entirely sure....which is a general question I have about the 2004 vintage generally. Slightly sweet end note that put me off. My first of a case....apparently 6 of only 1600 bottles produced.

Delicious! Out of the many great champagnes tasted this evening (including two 1996's of Billecart-salmon and a 1992 Dom), this was one of the most enjoyable. I hope that I can find this at a resonable price so I can stock up on these.
