  • Dinner at fermentAsian (Tanunda): wow! Complex nose of soy sauce, yeast, dried florals. funky, white flowers, hessian, savoury, dry, fine, slate, preserved lemons. Rancio, fresh and yummy, finishing with chalk, limestone.. chewy freshness. Delicate and complex.

  • Served after an exciting Barbadillo manzanilla en rama, this was not really electrifying: The nose seemed to have little flor at first, but the taste was dry and it seemed to be the result of competent winemaking. Perhaps PX is not really suited for dry wines?

  • Low alcohol? You're tasting, alright but seriously do you know what the hell you're talking about?
Love that pale greenish olive colour.
Nose releases directly aromas olive oil and almonds. I like that it has depth enough.
Palate is very shortie with a watery texture.
Accompanied a steamed lobster and a dense well-colder gazpacho.

  • The wine is clear and bright with a pale lemon colour.

The nose is clean and fully developed, showing pronounced intensity aromas of green fruit (yellow apple), citrus (lemon peel), yeast (generic yeast), acetaldehyde and hints of almonds.

The wine is dry in the mouth with a low acidity. It has a low alcohol (for a fortified wine) and a medium(-) body. It has pronounced intensity flavours of aromas of green fruit (yellow apple), citrus (lemon peel), yeast (generic yeast), acetaldehyde and almonds. The finish is medium(+).

It is a very good quality wine. It is very expressive of its style, thanks to its yeasty and acetaldehyde aromas, it has a persistent finish and very concentrated flavour. However it could be more complex.

Drink now, there is no point in ageing it since it is already fully developed.
