This is Cotat but in a fresher style. More acidity which pushes away the mellow fruit aromas present in the Monts Damnés and La Grande Côte. More mineral focus and citrus. Great quality although with long finish. No signs of aging. Will be excellent for another three years.

Les Caillottes is made in a less ripe, leaner, higher acid style than Cotat's other bottlings and this is noticeable here. Grassy, flinty nose with a touch of background citrus. Light mouth, moderate acidity, but a notable mineral structure in the finish and just the slightest hint of tropical and honeyed notes at the very end. Overall, an understated wine with elegant complexity that sneaks up on me with each taste. Impressed with this.

Two bottles of this over the past week, and I've gone back and forth in my mind as to whether I am overrating this. I think not. It is absolutely electric. There's all the young Sauvignon Blanc notes of citrus and gooseberry but there's just a drop or two of honey on the palate to elevate it above a screeching acid bomb and refine it beautifully. Finally a hit of chalk to give it a lovely texture in the mouth. "Age your Cotats," they say and they're right, mostly. But I'd drink this every day, and twice on Sundays, right now. It's fantastic.

A business dinner (Restaurant De School, Amsterdam, NL): Remarkably crisp for a Sancerre from Cotat, quite dry and chalky, performs a balancing act between pyrazines and the usual, riper Cotat style.
