Decanted around 5pm and tasted over 5 hours. Lightly bricked translucent ruby but still with a bright radiant core. Very velvety and elegant. Subtle florals, game meat, cherry and spice on the nose. Palate is distinctly wild cherry with layers of roses, meat, earth, minerals and chocolate. Very long but light on a tongue in the finish.So subtle and elegant.

3rd Annual Game dinner with Grand Cru Bourgogne (Chateau de le Shane aka Shane's house in New Jersey): Decanted 3 hours before serving. The nose was full of earthy forest floor, mushroom and herbs. Very elegant and smooth with little to no tannin remaining. On the palate it is so balanced and round with some cherry, quince, rosemary and earthy mushroom. Surprisingly good with the lemon roasted quail as the wine may have benefitted from the extra acidity. Great match though unconventional perhaps. I think this is just a little past peak but still wonderful!
