  • Great chablis. Again getting something more reminiscent of Cote de Beaune and hints of oak. But very subtle. Fantastic with oysters although didn't quite stand up to a homemade mignonette sauce with perhaps too much shallot, to be expected. Perfect with seared and oven baked salmon.
    Then something interesting happened. Tried a Beaujolais Nouveau style Luxembourg 'primeur' 2018 release pinot noir, which was quite nice with brin de paille cheese. Both going back to the chablis it was very Cote de Beaune, could even have been Puligny! Amazing.
    Note sure if there is oak in this. I would be pretty certain there is. Or some sort of terroir thing that makes it test more Beaune like than Chablis.

  • Very good again. Classic Chablis. Went well with baked salmon in a crémant sauce. Great with brin de Paille cheese after. Very crisp, lots of lemon, mineral.

  • Similar to last time, very reminiscent of a Cote de Beaune without really tasting oak. Rich yet very Chablis like still. Went well with sushi. Very good quality.

  • Very complex. Nut, flowers and stone fruits. Almost like a Cote de Beaune. I get a raisin & nut quality to this but with classic Chablis wet stone and iodine. Perhaps lacking a little fruit but that maybe due to youth and some reduction. In any case I prefer minerality to fruit in my Chablis so I'm loving this.
