Burgs, Birds, and Black Truffles (My place, Portland OR): At first, this was a bit coiled up and tough to get a handle on. After about two hours of air, it really came into itself as there is still a lot of primary qualities to the tones of raspberries, sour red cherries, dark red fruits, licorice, violets, fresh herbs, and tobacco notes. The Medium bodied feel has a brawny quality that is more broad shouldered than brutish. The Medium+ acidity is crisp and mouthwatering while the Medium+ tannins still have a bit of chewiness to them. This could still benefit from another few years of aging. This isn't an old school Chevillon and I really dig it for that. But, it still retains some of the sternness of the house.

Consistent notes with previous bottle...this is a great village level Burg for around $100. Well made and easy drinking. Will last a long time. On the bigger side. Loads of fruit and tannins.

Still has plenty of acidity and fruit brightness. Only 13%, but drinks like there's more alcohol. Somewhat pale, as others noted, but interesting and enjoyable with impressive length. Addl comment, Day 2: Has a hint of saltiness and is softer, rounder.

Last of the 3 pack and they were all consistent. Great producer and a solid bottle of wine. The 14 was young and could have easily gone a lot longer.

Classic Chevillon and NSG. Still young and primary. Lots of dark fruit. Good acidity. Very nice for a villages level.
