Finally living up to his potential and definitely the best of the 3 bottles. Ligth oxidative notes, baked apple. Aromatic with pear eau de vie on the nose along tea, honey and lemon. A lot of ginger bread as well. Almost oily, med body, nice balance. Acidity is not as high as you could expect.

Similar to the previous bottle with a hint of minerality, pear and apricot along some lime and baked apple. I kept wondering if I liked this bottle because of a slight oxidation like note and a creamy texture that I did not remember being that much in last bottle.

Partially fermented apple and lime; alpine rock bed flora; laced in the middle with firm acid, considering this effort costs less than ten dollah, a considerable value.

Mineral notes with a touch of nut and maybe a touch of green tea and honey (not on the palate though). Pear, dried apricot, lemon and quince. High acidity but also a certain fatness, balanced with a med finish. Interesting. Shows much more minerality and complexity than the straight Chignin.

Decepively rich fruit given overall light feel. Long finish. Whatever acidity this might have had has been largely absorbed. Drinking wonderfully.
