This was one of our most unusual tasting experiences. This mourvedre had a big bite that we couldn't get past when first opened. Re-corked and left on the counter, trying it each day without much change. On Day 7, it had somehow transformed into a really solid mourvedre, the pieces had come together. Most wines would be vinegar by this point. This obviously needs lots and lots of bottle age or a seriously long and vigorous decant.
