  • Hay, straw, herbal taste like; chicken essence, caramel. High acidity and sweet and the end of taste. Theres still slight bubble as you approach the first few sip but 30 min, its all gone.

  • 26 December 2012. Ah – the bubbles! They were plentiful, although now moving like octagenarians! They clung to the glass, as if in their last minutes. They were! After half an hour, they had all but gone, reminding us that 26 years is really the maximum that any champagne can take. The colour was a transparent dark yellow ochre rather than brown, with a lot of bright light around it. The nose was a little disappointing, just lemons and plums, but tasting was quite complex, with spicy cloves, lemon, damsons and grass. After a short while, it kind of fell flat, almost as if it had fallen apart before our very eyes. Perhaps it had. It then had a sort of old ‘dry sherry’ tang about it. This had been great champagne, but was in decline now.
