Method: Glasvin white glass at restaurant (Kato) [I brought the bottle]; bottle initially too warm
Look: darker gold as if somewhat oxidized and/or botrytis
Palate: apple juice, nuts, baking space (botrytis?); finish a bit shorter with a lot of nuts; medium sweetness; medium- body; medium+ acidity
Overall thoughts: Although this is a bit oxidized, it's a robust wine and still held up pretty well. I wouldn't have minded a bit more acidity, bu this paired quite well with the spicier dishes. This particular bottle seems past its peak for me. Pretty great wine.

So Schaefer! After permitting the 2005 pradikat sugar to fade for 10 minutes, this became just a classic WS refined, delicious accompaniment to Asian food. A surfeit of ash, honey, petrol, lemon rind, and hints of apricot, all framed by the Graacher stony,chiseled, leafy outline. Good for another 15 years.

Wonderful soft Spatlese. Loads of peach, pear and honeyed nose over a silky palate. More peach and honey, and a fascinating gingery salinity on the palate. Long mouth watering finish. More on the delicate intricate weave of flavors side of things rather than intensity. Yummy.

Rich nose showing notes of lime, pine resin, bees wax, stone fruit and maybe some botrytis? Fairly fat still. The sugar is nearly completely integrated. Sappy and a bit resin like. It could use a bit more acidity honestly. So it's more decadent than complete. Some stone fruits here and there. The nose is better than the palate. Held up well over three nights.

Huge nose on this, you would think auslese or higher level, though on the palate the sweetness was more appropriate for a spatlese. Some botryris gives it great complexity. Really fantastic (though interestingly it did fade on night 2, but drinking it in one night shouldn't be a problem!)
