  • Salty (suggesting sour) lemon, tea leaves, candied apple. The oxidative nature lessens as this is open, but does show classic oxidative flavors and aromas of walnuts, leather, lemon peel, earth. The fruit only comes alive once paired with food (Manchego, home-cured roast beef); served alongside, citrus flavors comes alive even showing a touch of sweetness in the fruit. Acidity also shows less sharp and more enjoyable with a lengthy finish. Must, MUST drink this with the right food.
