  • Drinking extremely well. Still effervescent, strong raspberry couli, and forest floor. Has a beautiful starch element which I can only place if smelling sweet mochiko rice flour. Nice balance and viscosity. Wine is clocking from label at 15.9 alcohol, but doesn’t feel like it. Doesn’t seem all that hot. Beautiful bottle. Good job. Just opened.
*2nd night dark raspberry and chocolate.
*4th night. Black tea and forest floor. The intense raspberry seems to be turning into an intense sun-dried strawberry and is kinda in between fruit phases. Pretty cool.

  • Ruby in color with no apparent bricking at this point. Has an almost sweet edge to the blue and black fruits coming through on the palate. Wine was decanted for almost 2 hours and was still holding strong!

  • Ahhhh...the last bottle of the fizzy 04 Heart Stone! Still has the co2 fizz...are you sure this wasn't suppose to be a sparkling Saxum Justin??? After the Mollydooker/04 Saxum shake...a drinkable wine! Not as tingly as in its youth...more mellow and integrated acidity and quite fresh tasting. The fruit is med bodied wild berry fruits, kirsch liqueur, mocha and exotic wood spice. Drinking very "lite" and cool climate...Arnot Roberts style...pretty florals and subtle pepper spice. Chill it up and drink it like a Saxum rose'! It's fun and tasty for what it is!

  • Had from magnum. Seemed like a dead ringer for a young CdP. Nice meat/game notes, but not too strong. With air, each glass finished with a wonderful mix of dark fruit and a luscious finish. The spritz from other 2004 Saxums seems to have dissipated. Lovely wine.

  • Initial taste after opening showed a very unpleasant effervescence that I hate in heavy red wines. Took several runs in the decanter to eliminate this(which it totally did). Left to decant for a while - really improved over an hour or so, and best at 3.
Nose is complex with blackberry/ dark cherry liqueur - like what you would find in a chocolate with a liquid center. Has a whiff of wood varnish and cinnamon, sage and flowers. +VA.

Palate is lighter than the nose would lead me to expect. Creamy and loads of dark cherries. Full bodied with satisfying richness. Great fullness throughout.

I have had several paso blends, my limited drinkings of Saxum tell me this winery is at the top.
Highly satisfying bottle after the fizz is dealt with.
