Dinner at Coulisse (Amsterdam, NL): [Restaurant purchase] No detailed notes. A very interesting combination of both an intellectual wine with an elegant complexity and the enjoyment of easy drinkability. Medium+ intensity on the nose, but in a very elegant way, not in your face kinda way with some light fire stone, white peach, a bit of oxidative notes with marzipan. High acidity, very long finish. 93-94+
2,5 ha, 100% Pinot Noir

I am a huge fan of producers like UC, Prevost, Bouchard. I love the approach of making 'wine' with bubbles in Champagne that are single grape variety, single vineyard and primarily single vintage. It makes for a singular experience. The Maillons is a wine as much as it's Champagne, it's bold with orange flavors dominating. It lacks finesse for a bottle selling for over $200. And that is the point. It's great, but at over $200 is not good value. There are better choices out there at the current price point.

Balanced. Fresh and fruity + toasty and chalky. Fine strong bubbles

This would be a great buy for $125, but I don’t think this is drinking at a level that current market prices would suggest.

Disgorged 02/16/2022, No. 07005. More accessible than previous bottle, fine mousse, clean, rich on the back palate. Perfect with hotpot. 93-94
