Dinner at Coulisse (Amsterdam, NL): [Restaurant purchase] No detailed notes. A very interesting combination of both an intellectual wine with an elegant complexity and the enjoyment of easy drinkability. Medium+ intensity on the nose, but in a very elegant way, not in your face kinda way with some light fire stone, white peach, a bit of oxidative notes with marzipan. High acidity, very long finish. 93-94+
2,5 ha, 100% Pinot Noir

I am a huge fan of producers like UC, Prevost, Bouchard. I love the approach of making 'wine' with bubbles in Champagne that are single grape variety, single vineyard and primarily single vintage. It makes for a singular experience. The Maillons is a wine as much as it's Champagne, it's bold with orange flavors dominating. It lacks finesse for a bottle selling for over $200. And that is the point. It's great, but at over $200 is not good value. There are better choices out there at the current price point.

Only recently disgorged, this is still a bit tight and lacks a bit of charm and complexity. In a few years this should be better. The finesse is exciting.
TN: Medium+ intense bouquet with fine dark berries, some fresher citrus fruit, smoke and rocks. On the palate this is superb, elegant with fine mousse and a well-integrated acidity. This is strongly mineral-driven, with some fresh citrus and darker berry note to complement. This lacks a touch of charm, but it’s still fun to drink.

Tasted at the Matter of Taste Zurich, “Champagne Now and Then” Masterclass. William Kelley explained that Olivier Collin had a brief internship at Selosse, again highlighting the influence Selosse has had on the industry. This Les Maillons 2018 was disgorged in 2022 (typically 60-72 months until disgoregement, pushing the limits). Grassy and spicy dimensions beautifully elevate the green apple fruit. Also hints of red berries. Detailed brioche and toast notes. Incredibly soft and refined palate.

During a MOT masterclass with William Kelly. This was the best Champagne of the day for me. Very delicate, fresh, intensely floral nose, some spices, quince, a dream. Refined palate with subtle bulles. Very grand-

Ulysse Collin Les Maillons (2018 base).

From a restaurant menu in Atlanta. Green apples, pear, some red berries, toast and lots of acid. Agree with the previous note that the palate has not yet caught up with the nose. This will be amazing but infanticide for now.
NV, 2018 base. Composed, very elegant, fine bubbles, really masterfully crafted. Long finish with discrete sandal wood notes, biscuit, very fine bubbles, sublimely delineated. Wonderful!

Beautiful and classic Collin nose. Pear, jasmine, ginger, peach, mineral, blah blah etc. Palate hasn’t caught up though. The 2017 was more open on release. Bury these for a few years…

Wines of the Camino de Santiago; 9/13/2022-10/19/2022 (Northern Spain): Those is deep and penetrating right away, filling the glass with Nectarines, baked apples, toast, biscuits, bosc pears, reduction, raspberries, baking vanilla, cinnamon sticks, custard, spiced pears, rose petals, and brioche. The Medium bodied feel is deep and poised with racy, high acidity. This is just sexy and complex with a real open youthfulness to it. While I’m scoring this a 94, this was my celebration bottle for completing the Camino de Santiago. So, the score is slightly irrelevant in the greater picture with this being a perfect cap to a great walk.

Apple/pear combined with spice/nut. This is so rich it tickles the pallet. You get hits of plum and berries and other red fruits with more spice and toastyness. Could drink this all day.

This would be a great buy for $125, but I don’t think this is drinking at a level that current market prices would suggest.

Disgorged 02/16/2022, No. 07005. More accessible than previous bottle, fine mousse, clean, rich on the back palate. Perfect with hotpot. 93-94

A wine with real presence and depth. A serious pinot power to it. It’s quite embryonic and needs a few years to find its way.

Great balance and energy but very young at this point, not showing a ton of complexity. Give it a few years.
