The mutability of this wine satisfied my wine geekiness. (My wife, who is a wine drinker but not a geek, would have said, "this is disgusting," and would have insisted that I open something else.) The wine changed not just over the course of two days, but from glass to glass, almost from mouthful to mouthful. In one instant, it was a soft, open, melon-scented wine; in another it was a funky lemon-scented acid bomb; at the end of the first evening, it was overwhelmingly bretty; the following evening, it was again more acidic than bretty; and the last glassful tasted like unsweetened grapefruit juice with an undercurrent of fermented tofu. So the wine provided a high level of interest, even if it was at times borderline undrinkable, and it has not assuaged my grave anxieties about the Brett contamination of the Scholium wines.

Very interesting wine, has a lot of orange citrus notes. Would not have pegged this as a Chenin Blanc; I think the 33 months in barrel took this wine somewhere else. It's very nice! Crisp acidity, not sweet but definitely has a round, sweeter mouthfeel. Pairs quite well with Jersey blue cheese. I concur with the prior note: This wine needs food pairings and then it sings!

Chenin Blanc it is. Will see how this develops. Just opened. *3rd night. Nice haze. Nothing really stands out in particular. Flinty and nice acidity. A great food wine, for sure.

Crazy dry! Notes of honey, honeysuckle, and some light herbs, with a glycerin mouthfeel. 12.5% ABV.
