Method: half-bottle; opened 30+ min in advance; served chilled in Grassl Mineralite

Look: pale yellow; slow, thick legs/ viscous

Nose: white flower, ripe apricot, honeysuckle, banana

Palate: banana, pineapple, cinnamon, slate, salt; medium finish of ginger and slate; full- body; medium+ sweetness; high acidity; really nice concentration

Overall thoughts: I had this about 7 months ago and it's already come together quite nicely. 7 months ago, this was quite round and probably seemed a bit sweeter, but now the high acid really provides a strong foundation to this big wine and it's even more balanced. I love the full body, big concentration, and high sweetness, all with great complexity and contrasting flavors of ripe fruit vs. spice vs. salt/slate.

This is an excellent wine and I feel like there's a lot of upside here.
