We felt that the wine was a bit closed to start with but opened up and hour into the dinner. It was an amazing match with some of the more hearty dishes. The wine had some amount of heft to it but yet was light on its feet. 2013 was a notch or two above 2012 on this day.
2013 Cristal Rose
Oh man. An amazingly complex nose. Makes you wonder if you are having a wine that’s 20 years older than its age. Chalky. Great salinity. Lives upto its reputation.

First impression is super closed and tight but what a nose.
Like a very yeasty brioche and a summer fruit tart. Really lovely notes of raspberry and honey. On the palate, this wine is incredibly racy, alive with an uncanny acidity and gripping chalky minerality. Just begs for an omakase dinner with otoro bluefin.
Needs 30 minutes of air just to get started. Simply too young to fully enjoy, but if you are compelled to open a bottle, I would highly recommend decanting!

From the cellar of my distinguished friend, Quiet Lion. I agree with his tasting note. Delicious, perhaps not the best vintage, and would benefit from at least a few more years in the cellar. I love the intense fruit notes in this Champagne!

Served at 48 degrees. This was delicious but not the best vintage of this, at least at the moment. Lacked precision.
