  • Finally found the 2021 vintage earlier today, so I figured I'd see how my last bottle of the 2020 version was holding up. Much like my last assessment, the nose is super wood-forward, though the hints of bourbon have faded quite a bit. The flavor carries that wood theme forward, with an über-dry palate that has notes of dark chocolate and charred bourbon staves, and finishes a touch more bitter than I'd prefer.

  • I didn't have the highest of hopes for this brew when I first tasted it 6 months ago, but it's actually aged more favorably than I was expecting. The nose is very dry and wood-forward, with just the faintest hint of bourbon. The body is still a bit on the thinner side, but grows a tad as it warms. The flavor is all dark roast and wood, with the usual vanilla and caramel presenting more as toast than anything else, while the finish is dry and woody, with a touch of alcohol lingering on the very end.

  • Like most Parabolae of recent memory, the dominant notes are a wood-forward barrel complimenting a stout that, while thin, presents solid roasted flavors. This vintage falls right in line with that set of expectations, and while there are hints of caramel and vanilla that I'm sure will fade in short order, I'm not sure I'd be able to confidently tell this apart from the '19 that's been aged and has fallen significantly off. It's good, but I don't think it's quite as world-class is it once was.
