I finally found a way to sufficiently aerate Envinate. See photo!
After 5 hours like this we melted the astringent, rubbery reduction, leaving a boundary of stone under which lived a pulsating core of crystalline red fruit.
Very interesting wine from the Canary Islands. Very tobacco, earthy and ash like in texture and on the nose this wine took about an hour to open and soften up. When it did there were layers of flavor and richness that wasn't there at the beginning. Nice medium finish. Enjoyable

Came last in a tasting of 12 Canary Islands wines. It had a rotten character that softened later, but was graphically described by a taster as "if an animal had died". Nose had same unattractive quality, maybe a hint of petroleum.

Gorgeous stuff. Bright light ruby, really vibrant. Lifted mid red fruit with a good dose of cracked black pepper. Light and very drinkable without being inconsequential. Well maybe a little, but only because something this joyful and yet serious seems a little incongruous. The sort of wine that modern Beaujolais should wish it had grown up to be. Balletic with a cheeky smile. The wine, not me. ****
