  D+0h: a little bit of deposit in both the filter and the bottle, smells of blackberry D+3,5h: purple red colour, smells of blackberry, raspberry, eucalyptus and a little bit of smoke, medium to full body, smooth in the mouth, has a little bit of residual sugar, so not completely dry, in the mouth blackberry, raspberry, smoke and a little bit of leather, in the aftertaste blackberry, raspberry, smoke, leather and acidity, good length (30 sec) D+4h: has a full body now, really good red wine.

  12-15 months typically, 100% oak (2,3,4 years old) to soften some of the expression.
  
  Leads with a little sweat and lots of spice and resinous herbal notes. Undulates and leads to creamy berry fruits.
  
  The palate shows brilliant acidity, very intense but has lift possibly a little hollow? Savoury and spicy, sort of leathery and notes of dried liquorice too. Subtly fragrant and a has a little chew. Plenty of astringency, fine grip, tobacco on the finish.
  Challenging and does want some food!

  D+0h: a tiny bit of deposit in the filter, a little bit of deposit in the bottle, smells of blackberry D+4h: dark as ink, smells of blackberry, leather and a little bit of eucalyptus, smooth in the mouth, full body, dry, but not in a tart way, in the mouth blackberry and leather with a little bit of raspberry in the background, in the aftertaste blackberry, violets and a little bit of leather, very good length (more than 30 sec), really great red wine.

  Drinkable now. Fully aged now.
  Smooth tannin, not strong acidity or body
