Really delicious. Beautiful floral, green apples, lemon, slight hazelnut, a touch of vegetal bitter, and wicked mouthfeel at this stage. With time in the glass, the texture evolves to be smoother and more elegant, with texture of confectionary sugar coming forth in the mix reminiscent of some Côte d’Or classy White Burgundies (like PYCM).

Now tasting the second bottle from the case. It has developed a bit since last time, but it will improve with 5 more years - at least. Lovely nose of citrus, dairy, grass, salinity. Nice ripeness and a touch of exotic fruit. Very good balance, high viscosity and a long finish. So good, but will be looking forward to taste again in a handfull of years.

Vintage made this more accessible than most Dauvissat at this stage, and a richer style. Some of the flamboyance you get from Raveneau but a touch more classical and typical of the appellation. Tropical fruit, a fair bit of acidity, and loads of chalky mineral. Aromas of wet clay and pear.
Seems like a wine that is unlikely to benefit from extensive age, but I don’t have a lot of experience with this producer so maybe there’s more to come.

Vacuum sealed and tasted again few days later. This had more stuffing and complexity. Thus while the initial showing didn’t present as much tension as I expected, this may still yet be early innings on a long lived wine. If you open anytime soon, give it a lot of air.

A Few Miscellaneous Wines in Burgundy, Outside of Meals and Tastings; 3/18/2024-3/24/2024: Small glass shared from the next table. Less classically Chablis right now, more opulently 2019, yet a mineral backbones ever-present. Very good tonight, but maybe even better with age.

12/5/2023 - viniferatu Likes this wine:
gorgeous stuff, quite ripe and rich but super classic
aromas of sweet citrus, ripe yellow apple, airy lilies and vanilla, clear salty seabreeze...
full and viscous on the palate, layers of ripe fruit, salty and pithy too, tight and zippy overall, very long but also clearly very young
