A nine year old wine which I knew when I purchased it three years ago was far too young, I thought it would be ready when I opened in in Ox Belfast, Northern Ireland's top restaurant. Instructions to open it at 1pm and decant as I knew it would be drank around 3pm.
On the nose menthol, black cherry and raspberry. There were hints of garrigue and light herbal notes. The intensity of flavour in the fruit was mind blowing, almost painfully intense and youthful. The tannins were integrating well and there is a lovely fresh and balanced acidity, but that black fruit is so intense and youthful as to say that this is a bottle of wine to put away and forget about for another 5 years.
