Dinner with DC (San Shu Gong): 2018 base, 11 months on lees, tirage Jul 2019, disgorged Dec 2022, 0g/l, 75% Meunier, 25% PN, 7757 bottles, red apple, med body, rather piercing acidity causing unbalanced. No much difference on the 2nd day. Need a lot more time for the acid to soften and the fruits is not sufficient to support the acid.

Back label says 70/30 PM/PN, 2018 vintage, disgorged July 2021, 3995 bottles 0 dosage. Really impressed with the tension in this wine for a 2018. Citrus, tart red fruits, and great minerality. Even better on day 2.

75% Pinot Meunier and 25% Pinot Noir from the 2018 vintage. 11 months spent on oak, bottled in July 2019 and then disgorged 2 years later in July 2022 with 0 grams dosage.
Very, very acidity driven where the freshness and minerality is in the center of it all. Wouldn't have guessed this to be so Meunier-heavy. Lemon and lime juice, lemon sorbet, unripe stone fruits, almond, minerals, chalk with a very crisp and light feel to it and waves of acidity both in the start, middle and finish.
Would be interesting to see how this develops with more bottle age.

Dunkles Gelb, milde Perlage. Reiffruchtige Nase, funky, nasser Hund, Fleischbouillon, Apfel, Kräuter. Reichhaltiger Gaumen, üppig, konzentriert, dennoch straff, top Säure, wild und dennoch bei sich. Mittlere Länge, salines Finish. Ein Champagner mit Seele und hohem Fun-Faktor. 90 vvPunkte
