Festival of Phil (Phil's place, Putney, Sydney): From Coravin. A little lime over lemon, slight kerosene, slightly herbaceous, honey, bees wax. Medium plus intensity acidity, tangy, very slight burr on the mid palate, long, citric. Hmm.

Coravin fun - Alsace, Loire and Random French (My place, Kent Street): From Coravin. Lemon, bees wax, slight lanolin, clay, umami notes, honey. Medium plus acidity, lemon, honey, slightly buttery almost, mid palate burr, waxy texture, long, very long in fact, that tangy note to the fruit again. Very good indeed.

The last of my stash. Judging by how this is improved over last year I drank them too young. They really to do need 15 years in a bad vintage and 20+ in a good one to sing. Light gold. Enticing nose of exotic flowers eg jasmine/honeysuckle, still a hint of green apple and honeyed pineapple. In the mouth it is light, intense, suppleness, complexity, great structural acidity keeping the fruit bright and seems halfway on the journey from primary fruit to tertiary characteristics. This is a really good food wine that can cope all the way up to poultry. Dancing long finish. Truly deserves it's high rating. Where do I find more?

Coravin fun - Old new and new old arrivals: From Coravin. Bees wax, summer meadow, honey, apples, lemons with time a little lanolin. ON the palate it has medium plus acidity with flavours of apples, lemons and honey which all travel exceedingly long. There is a suppleness to the texture which is quite beguiling. This really is quite superb.

No ullage on this one. Nice entry weight in mouth with smooth medium bodied profile and elements of granny smith apple, hint of lime, honey. Detectable acidity on the close although that dissipated as the wine breathed. A superb wine for fish and matched the barramundi perfectly. In a good drinking window now and for 10 years to come knowing Bredif wines. I use the level of the black staining of the cork (unique to his cellars) to guide drinking. Start at 1/3 staining and drink last when at 2/3 staining of length of cork. This one at 1/3.
