I liked it less than 2006 and 2007, but still a very solid Premier Cru Chablis. It took about one hour for the seashells and the associate salinity to emerge. Seems that it could use another couple of years in the cellar.

Epic! Complex aromas - primarily of grasses, sous bois, ocean mist, mushrooms, minerality and white florals. Palate mirrors the nose and exhibits some fruit: lime and sour apple. Round, creamy mouthfeel with bold, powerful, dense flavors leading to a big finish. Paired well with Thanksgiving gobble gobble. 93-94 now. *Daniel-Etienne Defaix is 14th generation winemaker from one of the oldest winemaking families in Chablis who have been making wine for about 400 years. *Daniel-Etienne Defaix purchased their 3.5 hectare portion of the 5 hectare Les Lys in 1978 when he was 18 years old. *For each vintage, only the best lots of each Cru are designated as such; the rest are declassified and sold as village level. *Vintages are released when he deems them appropriately aged; this 2008 Les Lys was released in 2022!
