Day 1-2 - Color: lemon yellow with just a touch of bronze. Nose is typical of Chenin but on a riper side - citrus (more orange/ grapefruit than lemon), baked apple with cinnamon, canola flower, and beewax. The mouth is clean, full and buttery like ripe mango - acidity eventually catches up to some extent, but the attack to middle is dominated by residual sugar. Finishes with malty bitterness and yeastiness, like Weizen beer mixed with grapefruit juice. Tricky balance, not overly complex, nothing wrong but difficult - I was expecting something more immediately impressive based on the price tag and the producer’s reputation.
Day 3 - paired with mango and linzer tart. When sweetness is killed by the food, the wine shows beautiful structure of edgy crescendo acidity and steel-powder mineral.

Post Barolo with Bill & Crew: Honey, melon, straw and peach on the nose. Sweet and tangy on the palate, good flavour density - though I wouldn't mind a little more acid to lift it up another notch.
