Samples from Bill #8: Orange peel, peach, graphite, floral notes and some smoke. Crunchy acidity, plenty of texture and a light oxidative touch to it, fruit sweetness in the background but swallowed up by the rest of the wine.

A "cult" wine tasting and lunch (Restaurant Bak, Amsterdam, NL): Complete and ripe Jura character, more comfortable and rounded than the l’Étoile wines, noticeable bitters, not as precise and energetic. Nowhere near as brilliant as last time - bottle variation? Or was it the company of the l'Étoile wines?

Has the acidity of a Jura wine to start with. No defaults at all on this natrual wine. Lots of pears, not so much honey and pollen on the finish. Fair wine for the price paid.

A private tasting (Buurtcafé De Tros, Amsterdam, NL): Very precise, playful and elegant, floral and light on its feet, earth and minerals, lovely fleshy texture buffers bright acidity, ripe orchard fruit (peach, pear), wonderfully elegant and flowing, dancing almost, silky and polished, hint of flower honey, exceptional finish. Even better on the second day.

Cloudy pale straw color; nose is slightly oxidized and the palate is...carbonated! It's like drinking Lambrusco, but white! Undrinkable.
