Wine 2: Louis Michel Chablis Grand Cru Les Clos 2021.
Paired with Oysters.
What a pure and complex Chablis! Very clear color. The nose is all lemon and sea breeze. Let it get some air, it needs it. The palate was so light but had a lot to offer. Dried lemon peel, lime zest, herbs, high salinity, flint, sea weed. This paired beautifully with the oysters but on its own its easy to see that it needs more age. Great Chablis! It will probably get a 95pt score in some years from now.

So young - and so closed, Salty, intense, mineral notes, citrus here, bit it is restrained as everything is very tight like a fist coverede in chalk. Tasted over five days, opens only very, very slowly indeed. #podcast

Fantastic wine. Bought bc of a 94 review. Unlike any other chardonnay/chablis I’ve tried. Had a concentrated strong allmost dried lemon (seed) taste.

Palate: Rich with great concentration. High minerality with a long finish.
Note: Very closed at this point, needs more time. Hold it for at least five more years, and it might be in the 95p territory.
