Paired this with Chilean sea bass figuring it’d complement the miso glaze with a bite of acid and fruit. Bingo. Lime and yellow pears with an edgy clean finish. Very nice.

Annual NYE Dinner and Champagne (My House): Enjoyed this, and it was a good palate calibrator given all the Champagnes we arrayed with it. Seemed like it had a pear signature, playing alongside a little petrol/diesel. Juicy with good acid.

Citrus and pear compote and a sense of mineralogy on the nose. Focused and detailed. Chalky with excellent extract delivered with grace on the palate. Beautifully balanced and really starting to come into its own.

Non-chardonnay white wine (Craig's yard): Crisp zippy acidity with some sweetness and a somewhat coating mouthfeel that makes the wine seem rich. This is a vast improvement over most pinot gris that I've had.
