A "cult" wine tasting and lunch (Restaurant Bak, Amsterdam, NL): Château Chalon from Sous Roche, bottled after four years sous voile. Overripe pear, putty, huge power and acidity, uncomprimising but not austere, savoury and salty, excellent length.
