  Dag 1:Doftar av smultron, jordgubb och örter, basilika? Dragon? Tyvärr är smaken lite väl funky för mig. Får lite toner av vinäger. Frågan om det bara är flaskan, eller om det är stilen. Tydlig naturvinskaraktär, lite i vildaste laget för mig. Kanske köpa en flaska till och lägga undan för att se hur den är med lite lagring. Kändes väldigt ungdomlig.
  Dag 3: Den värsta syran har lagt sig, var nog ungdomlig karaktär av jäsprocess fortfarande. Nu doft av cola, viol och lakrits. Upplever vinet som djupare och mörkare än dag 1. Faschinerande utveckling och vin
  Dag 4: Vinet har börjat sjangsera, doften mindre komplex, påminner nu om enklare nebbiolo.

  Really love this, and only have one bottle left from half a case. Wild strawberry, micro basil, and violet bouquet. Well balanced and very enjoyable juice.

  Fleurie violet on the nose, becoming more showy with a few hours of air. Relatively strong tannic backbone for Gamay with welcome acidity to match. The palate is kaleidoscopic compared to the focused nose, bright cherry, strawberry, sandalwood, almond, and a long enticing finish. Elegant and clean, good potential upside with patience. 2026+
