    Exuberant nose of raspberry, mint and cherry.

    Winey taste, almost tannic. You have to like the bubble red wine side. If so, then you will love this wine combining aromas of strawberry, raspberry, mint, ash and a very saline minerality. This whole thing swirls in the glass with an acidity that brings tension and life to a very energetic wine. Beautiful finish with bright fruit sprinkled with iodine, with a length on mineral salts.

    Excellent, undoubtedly the best rosé de saignée currently, but the prices are becoming discouraging.

  • Ruby red color. Tasted like an effervescent Pinot noir with a hint of citrus and herbs. The first rose I’ve had that smelled like roses. I don’t know if I’d say it’s more interesting than good - it’s both - but it’s definitely more intellectual than hedonistic, nowadays worth the price of admission once but I wouldn’t crave it regularly.

  • Ulysse Collin dinner at Shaw's (Chicago, IL): Lot No. 13, disgorged February 2016. The nose has this spicy thing that kind of evokes whole cluster pinot. That's pretty interesting for sure, but I'm not as sure that I want to experience it in champagne. This doesn't have quite the confectionary elements as the 2017, but still feels disjoint (as with all saignée champagnes) on the palate. Pleasant enough, but again a wine that's probably more interesting than good.

  • Unique and fabulous rosé champagne from the frosty bottle, disgorged February 2016. You know something different is happening from the deep dark cherry color, the darkest rosé I have ever seen. Active to overactive mousse tries to climb out of the glass and almost succeeds. Extraordinary bouquet and flavors of black cherry, dark raspberry, cranberry and cherry cola. Intense, winey and extremely lively with bold but not excessive acidity. Powerful and delicious. A wow wine.

  • Leroy Field Trip; 2/11/2022-2/14/2022: Lot 14, disgorged Feb 2016. This is the most Pinot rosé champagne I have tasted. Fresh and sparkly but quite tanninc, with a still red wine profile of stem and red to purple fruit. Very yeasty, high acidity. When drank at night (with fried chicken) the bubble disappears and it can easily be mistaken as a natural, skin-contact still red if served blind. Paired super well with grapefruit and dessert at brunch; simple, not too complex. 91-92
