  • Ulysse Collin dinner at Shaw's (Chicago, IL): Lot No. SOL F12 si, disgorged February 16, 2016. Not much fruit here -- this was herbal (with some almost amaro-like notes) and showing plenty of high-toned aldehydic notes as well. Far more oxidative than the other Collins up until now, with a distinct, almost copper colour in the glass. Interestingly, this also had a strong iodine tint to it as well. More interesting than good, I'm glad to have gotten to try this, but drinking a bottle would've been a bit of a tall order.

  • Beautiful. Cultured butter, toasted hazelnut, and Meyer lemon marmalade. This is strongly developing with some lightly oxidized notes, but not at the peak yet for my taste. It's nonetheless exquisite drinking currently.
    On day 2 it's no less fantastic, but showing a more mature personality with a strongly bronze hue to the glass. I think this one is cruising toward the peak.

  • Medium golden color. Very few bubbles, which is the house style. Pretty advanced and surprisingly mature notes of hazelnut, dried pear, some mint, chalky minerality, also some honey. Opens up some more and gains complexity with some time in the glass. It‘s pretty full-bodied and dense, but has that intense vein of pretty high acidity cutting through the richness. Long finish. Another superb Champagne from this top-notch producer. I am not sure about how long this will age (most of his wines age really nicely) as it seems slightly advanced, but still gets better with air.
    Day 2: It has opened up some more, with some more fruit and minerality/smoke coming through. This is really beautiful, explosive and aromatic.

  • 2012 base. Very sharp and focused. Acidity almost had metallic tinge. Not as full-bodied as 2011 base. Maybe needs a little more time to really strut. Still delicious drinking now!!
