Barolo at RPM Steak (RPM Steak - Chicago, IL): Decanted for ~5 hours, poured back into bottle, and served a couple hours later. This still needed time to open in the glass. Aromas of balsamico, old leather, and dried fruit with some funk of age that blows off with 20 minutes. Palate is fully mature with light-to-medium concentration of a cherry and balsamico reduction. Still fresh with lots of energy that makes for a precise, long finish. Ethereal and even better with food.
