Once again this champagne continues to deliver. As my wife has stated, it’s the best champagne she’s ever consumed. Still showing firm, effervescence, with layers upon layers of secondary and tertiary notes. Hold holds up in the glass as well.

My 3rd bottle from a direct purchase ex-chateau. Slight pressure in release. A deeper golden orangy hue than a remember. Good effervescence which held up through out the bottle. As expected the nose is very unctuous with rich orange, marmalade, honey notes, almond paste. Palate continues along the same path with hints of old minerals and sea shells. Amazing complexity and still showing structure.

At the opening, we realize that the effervescence has disappeared
However the nose offers beautiful things, the caramelized orange and a very intense smoke emerges.
In the mouth, it is no longer champagne. But the juice is intense, providing magnificent chocolate flavors. The finish is still fresh but on the decline. Unfortunately, the wine will oxidize on aeration and the material will become gaunt over the tasting, thus signing the death warrant for what was left alive in this bottle.
A wine that should have been drunk a few years ago.

My second bottle in 6 months. Again the 81 is showing amazing complexity and depth. Rich and onctous with orange marmalade touches, nutty butter, white oak, with a long finish of mushrooms and amber oil.
