On the nose, Granny Smith apples lead into warm pear torte, light almonds, toast and toasted sesame seeds; even a hint of pancetta?? In the mouth it's very consistent with the nose. Small bubbles, good acidity, complex nuances of baked goods with a little cinnamon, tart apples and pears. A little more bread/yeast would have been great but overall well balanced and delicious.

Nice baked apple and a bit of chalk on the nose. Very refreshing, with nice yeastiness and minerals on the palate. Good length and cut as well.
