  Textbook old Burgundy scent right from the pop of the cork lets you know this is going to be good. Just a deep, powerful, old Burgundy funk. Even so, this may have some development ahead of it as it started with a slightly boxy structure and got more and more refined over several hours, eventually turning into that refined silk that a good Cailles usually delivers. This still has deep, rich fruit too, dark and plummy and with enough material to give the wine a thick mouthfeel.
