Seared Diver Scallop (singular--great--wanted more), Celery Root Puree with Herb Sea Broth

  Very light in color with a bit of apricot and sweet rhubarb on the palette, and a very crisp finish.

Mullard Duck with Braised Salsify, Clover Honey and Thyme

  Very fruit forward aromas initially--the wine did start to open up after 45 minutes. Pleasant, but not extremely complex.

  A hint of oak and vanilla aromas, with integrated tannins that indicated potential. After 45 minutes, still a bit of vanilla present.

  Definitely the darkest red color of the 2004s tonight. Beautiful black currant aromas that typically would indicated a huge, powerful wine, yet very light on the palette. My favorite of the 2004s.

  This was the most tannic of the 2004s, but possibly could have the most potential. Fairly fruit forward nose--this wine needs much more time.

Mixed Grill of: Roasted lamb chop with white beans and garlic; Rib Eye with truffled shoestring potatoes (awesome); braised short rib with southern greens (amazingly tender)

  Had alongside the 1995 Ch Lynch-Bages and the 1995 Ch Cos d'Estournel. Just did not seem as deep as the other two. I actually preferred the style of the younger 2004 Leoville Barton. Seemed to have a bit of background caramelized sugar sweetness on the finish that was interesting.

  My WOTN. The most complex wine of the night, with deep aromas involving black and red currant that did not overwhelm the senses, yet a very smooth texture and finish. Showing extremely well right now—awesome wine.

Traditional Apple Tatin with Crème Anglaise

  Very nice dessert wine with pleasant sweetness and a hint of tropical fruit. Missing some of the botrytis characteristics (and complexity) that I love, though.
