Flight 1 (1 note)

White - Sparkling
1970 Moët & Chandon Champagne Cuvée Dom Pérignon France, Champagne
caramel colour and distinct note of oxidisation which I don't mind in champagne. a lovely start to evening.

Flight 2 (2 notes)

Red
1999 Domaine Armand Rousseau Père et Fils Chambertin France, Burgundy, Côte de Nuits, Chambertin Grand Cru
96 points
one of the more forward and accessible Rousseau Chambertins I've had, partly helped by the sommelier deciding to double-decant 2.5 hours ahead of drinking. complex and intense on the nose, not as massively structured as one would expect on the palate. would love to try it without decanting next time.
Red
1999 E. Guigal Côte-Rôtie La Landonne France, Rhône, Northern Rhône, Côte-Rôtie
95 points
massive and powerful despite double-decanted 3hrs ago. exciting layers of flavours that kept evolving. perhaps just a tad young still.

Flight 3 (2 notes)

Red
1989 E. Guigal Côte-Rôtie La Landonne France, Rhône, Northern Rhône, Côte-Rôtie
96 points
beautifully developed after being double-decanted 3hrs ahead. wonderful balance of intensity and finesse. lovely.
Red
1989 Henri Bonneau Châteauneuf-du-Pape Réserve des Célestins France, Rhône, Southern Rhône, Châteauneuf-du-Pape
97 points
double-decanted 3hrs. dense and intense. dark fruits, kirsch, exotic fruits, pepper, mint, tobacco - just a fabulous kaleidoscope of exciting flavours.

Flight 4 (2 notes)

Red
1994 Dominus Estate Napanook Vineyard USA, California, Napa Valley
98 points
probably the best bottle I've had ever. double-decanted 3hrs prior to drinking and that's what it took for to show its true colours. still fresh and youthful, it's packed with intense aromas of smoke, leather, forest fruits and spices. stunning.

Red
1994 Opus One USA, California, Napa Valley
97 points
the best Opus I've had. 3hrs double-decant. sexy and irresistible. thought it was a Petrus!

Flight 5 (2 notes)

Red
1982 Château La Mission Haut-Brion France, Bordeaux, Graves, Pessac-Léognan
94 points
4hrs double decant. while still alive with pleasant notes of tobacco and spice, I thought it was a little over-breathed and lost some of its energy.
Red
1982 Château Léoville Las Cases France, Bordeaux, Médoc, St. Julien
91 points
4hrs double decant. disappointing. probably over-breathed. seems to lost some intensity. distinct green pepper which I didn't enjoy.
