Candie Does Cassoulet

Candie's, Mpls

Tasted April 3, 2024 by rocknroller with 34 views

Introduction

Candie was sitting on a stash of cassoulet, and decided now was the time to fence the goods. There was a hungry group of six of us that were happy to dispose of the evidence (CS,SS,LI,BB,KB,DM). We had a flight of reds from three different regions to go with the cassoulet which worked out really well all offering a slightly different, yet wonderful pairing experience. The Nicoise sald before that paired with the Bagnol rose was a great as well. And when you end with her signature Tarte aux Fruits, well, ooh lal a! Thanks Candie, well done!

N.V. Pierre Paillard Champagne Grand Cru Extra Brut Les Parcelles France, Champagne, Champagne Grand Cru

Light gold color. Drank a small glass over 30 minutes. This got my attention tonight more than spme other recent bottles. Mineral driven, citrus, bright and focused with good tension.

White - Sparkling
2009 Ruinart Champagne Dom Ruinart Blanc de Blancs France, Champagne
96 points
Light gold color. Drank a glass plus over 45 minutes. First bottle, and that notable Dom Ruinart elegance and pitch is clearly on display this vintage. Ultra refined with a featherweight feel, crystalline minerality, pear glace, nectarine, toast, almond tart, tangerine, long and crisp. This is a gorgeous Dom Ruinart, ready to go and going to get better. 95+ to 96pts.

Rosé
2019 Domaine du Bagnol Cassis Rosé France, Provence, Cassis
92 points
Ultra pale salmon color. Drank a glass over 45 minutes. Wow, this was on fire tonight. Intense nose with brisk citrus oil, tangerine, strong Mistral sea breezes, river
rock on the nose. The palate offers the same intensity and depth as the nose; focused, fresh, great acid, orange oil, tangerine parfait, sun ripened Meyer lemon, flint and ocean minerality. This was quite blissful and not to be ignored. Not as flashy as Tempier, but really focused and riveting, and on the same level. 92+ to 93pts.
Red
2005 Château Brane-Cantenac France, Bordeaux, Médoc, Margaux
93 points
Very dark red color. This had an hour and a half decant and then went back in bottle til opened about 8 ot 9 hours later. Drank a glass over 90 minutes plus. This was nice from the start, but it didn't take too long, maybe 15 or 20 minutes before it really showed the high toned perfume of cassis and raspberry fruit, very pure and inticing; anise, shellac, subtle violets and dried earth. The palate is a mix of the same fruits, black and red, more cassis shows over time, anise, mineral, graphite, medium-full bodied and light on its feet, polished tannins and quite suave. Glad to see I've got some of this. The air served it well, and this is ready for drinking now. 93(+)pts.

Red
2005 Domaine Auguste Clape Cornas France, Rhône, Northern Rhône, Cornas
94 points
Medium dark red color. Drank a glass over 90 minutes. Thishad 2 hours of slow O time. Provocative nose with a lot of deep moss and damp earthy forest floor, candied cherry fruit, followed by cassis and plum, tons of spices, sauvage, and suggestions of iron and metals. The palate is bright with cherry, candied cherry, cassis, huckleberry, iron, deep earth tones, high toned spice, sauvage, tart berries, round and medium fine tannins and a bit of a metallic finish. This is filled with tension and complexity. Loved it.
Red
2010 Le Vieux Donjon Châteauneuf-du-Pape France, Rhône, Southern Rhône, Châteauneuf-du-Pape

Dark red plus color. Drank a glass over 90 minutes. Kirsch, black plum, cherry, classic garrigue, black pepper. The palate is plump and juicy, kirsch, cherry, plum, garrigue, olive tapenade, black pepper, medium full bodied, with moderate tannins now. This still has some room to improve.
