Don & The Shrimpheads (Craig & Nita's Place): Light gold color. Drank a glass over an hour plus in mini vertical of '05, '10, and '12. This was my favorite of a really enjoyable trio. Steely and bright on both the nose and palate, ocean airm limestone, white flowers and slate comes through on the nose. The palate is almost bracing with the brisk acid and striking minerality, tart lemon and more subtle Cara Cara orange. Great purity and precision. Loved it. 95+pts.

Local Minneapolis Chef extraordinaire Don Saunders cooked for 8 Shrimpheads at my place. We highly recommend hiring Don to cook for in home events! Siggy's btl. Siggy generously brought 2 vintages tonight. No complaints about that! This was paired with David's '12 Dauvissat Preuses w/ our Halibut course. PnP so started out a bit taunt then continued to unfurl nicely in the glass. All those classic Chablis markers w/ Dauvissat's signature roundness. Very enjoyable. Too bad Dauvissat has sky rocked in cost and become impossible to source locally which was once easy-peasy at remarkably good pricing when I was still acquiring them myself. Such a pleasure to have 3 of them with our meal tonight! 94+

There is a huge mineral laser like potency under the surface here in the nose but it’s showing somewhat muted. Some shells, and florals. Lemon and tight and lotse of citrus. The end palate into the finish is really powerful and briney and delicous. This clearly wasn’t showing at the level of bottles from some other reviewers. It felt like it was holding a lot back. But still very good. Nose - 5/6, Palate - 5/6, Finish - 5.5/6, Finish - 1-1.5/2 = 16.5-17/20.
Day 6: Nose is golden and green. Lots of minerals and some salty popcorn. Something like green herbs or mint - Crisp & crunchy. Hints or white florals but not a lot of fruit now. Almost brothy with hints of kumquats. Very savory and nutty now. Good focus and definitely potent - almost reminds me of a Lopez T blanco at this point. Some oxidation. Long nutty and saline finish.

A Summer Giacosa Dinner (Spinasse, Seattle): Medium yellow. Iodine and algal tones. Medium weight. Fluid, brothy, and complex, but not a razor edge Chablis due to only moderate acidity. Round and long with fruit more in the pear than citrus register. Improved constantly as it opened. Excellent.

Absolutely incredible is the 2010 Preuses with an intense nose of citrus, sesame, and algae — the latter a quality I often find in Dauvissat's Preuses with age. Concentrated palate with citric and floral flavors, lingering finish, excellent.

#dauvissat 2010 Chablis Les Preuses could be one of the top vintage for Dauvissat and really good to drink at the moment, showing excellent balance with details of the great Chablis Grand Cru, very impressive.
I prefer 2014 a little more, drinking 4-5 months ago, more lively of freshness, beautiful acidity.
But 2010 is more typical more classic. Wonderful Preuses !!

2010 Fevre and Dauvissat Grand Cru Chablis (Oceanaire, Mpls, MN): Light medium gold color. PNP, a drank a glass over an hour next to the '10 Les Clos. Not nearly at the level of the Les Clos, at least not at this point. I think with the way the '10 Les Clos showed today, it will be a heard act to follow even with more cellar time. The power is there, showing more oak too which perhaps will fold in and give more clarity; plenty of dry extract and intensity is there, tangerine, lemon, shows the limestone, but it comes off a little bit awkward and not showing the elegance one would expect.

Decanted for 2 hours. The nose seemed a bit closed, only with swirling did I get some lemon, sea brine and iodine. Wow the palate is deep and complex, loaded with chalky structure, medium acid and lots of dry extract on the long finish. This was my wine of the day.

Brilliant wine. Bright yellow- Almost sparkles in the glass. Flavors are bright and pure, exploding in a cascade of stone fruits in the mouth. As good a Chablis as I have had.

Another lost Friday afternoon gathering – 88 DRCs, 90 Bordeauxs, Raveneaus, Dauvissats and etc. (Black Salt, Washington DC): Beautifully focused and energetic nose displaying pure sweet white fruit, pear, a hint of lemon curd, honeysuckle, beeswax, perfume, saline, sap, crushed rose and crushed rocks. Excellent concentration, nicely layered ripe clean white fruit, rich yet pure, precise and focused, bright acidity, strong mineral and a long sweet white fruit driven finish with crushed rock and rose petal at the end which is beautiful and haunting. I have had bad luck with Dauvissat recently. Lacks the opulence and sexiness of Raveneau but displays exceptional focus and precision. This is a classic GC Chablis and a classic Dauvissat.

At the end of a long evening. Brief impressions only. Had not the roundness and sexiness of the Les Preuses 2008 drank alongside. A more citrus fruit driven core (as opposed to more tropical fruits), more minerality, less creamy texture to balance the acidity. Medium- complexity and length only. Quite good but not great. I would wait another 5 years at least here.

Part of an unexpected Chablis mini-vertical. Conditions not ideal with bottles already open a while and kept at room temperature. Slightly oaky and citric would the key words on the nose. Round with a creamy texture on the palate.

The nose started off with savoury notes of hay and flint. It quietly built in the glass, gaining intense lemon scents and a dollop of butter. There palate was textural and intense, with great shape and clarity. It finished bone dry and minerally and length is fantastic.

Celebrating Bob's birthday (Maude's Liquor Bar, Chicago IL): nose: tight nose with good depth and tones of lemon zest, flinty tones, crushed rocks, minerals and citrus tones. Good depth, but just a bit unforgiving right now on the nose.
taste: light bodied with some screeching high acidity. The acidity is a bit palate destroying. Underneath the acidity lie tones of citrus, minerals, and flint tones. Very good depth, but the structure is overpowering right now.
overall: this is an extremely young wine. The raw materials are there, but the structure is just a bit unforgiving. This needs like 8 years before really showing itself.

Bob's Birthday Dinner (Maude's Liquor Bar - Chicago, IL): Took some time to open up. When it did the nose was exotic and powerful with dense marzipan, herbs, flint and lemons. Its palate was pure and crisp with great lemon and that exotic smokiness that chablis can have. There was nice seashell and salty tones as well - needless to say, this paired well with some oysters.
