Drinking well now. Utterly smooth. Forest floor. Menthol. Pencil shavings. Opened to beath 2 hours in front of consumption. Could definitely use 3-4 hours for those still with bottles.

Drank with Uncle Doug and Aunt Sue, September 28, 2022. Decanted for about 40 minutes Elegant palate yet contains depth of flavors from espresso to dried herbs Gorgeous expression of South Australia and old world wines.

From a sample from a magnum at Hedonism wines. Thick opaque color. Blackcurrant and blueberries juvenile fruit aromas and cherry kernels. Great structure with fine tannin, acidity and again black fruit and tapenade in the mouth. Smokey mid. Rich and full bodied yet it retains its elegance. An intense and persistent finish to top it up. This should easily compete with the best Bordeaux, just give it another 10-20 years in the bottle. A shame to open it now with such potential. The best Aussie cab I have yet tasted and very left bank Bordeaux. 96-97p

From magnum. Very dark purple, and sexy to look at. Sensational aroma of cedar and (pushed to the background) dark fruits. So concentrated on palate - wonderful dark treacle, chocolate, blueberry, eucalyptus. Very young, so still tannic, but so impressive.
I can't get the smell of this out of my head and wish it wasn't so expensive...

Deep plum blue in the glass. Looking and smelling young as shit. Rich aromas of blue fruit, plum, dark chocolate, cedar, cigar box. Such a juicy mouthfeel backed up by a beautifully creamy texture and huge depth. Complex with a very long finish. Tasted this blind (knowing the producer), thought it was a Grange. Such a good wine, one of the best New World titans I've had.

Brief sip from a guest at Grailey's, but it didn't take much for this to register as a very fine wine indeed. Dark fruit, cedar, pencil shavings, and a depth and complexity which belies how young this is. Wonderful stuff!

Dark purple color. Heady nose of eucalyptus, mint, chocolate, fresh red fruit. Wow.
Great balance and structure. Palate explodes with red berries, chocolate, raspberry jam. Great concentration and purity of fruit. Luscious, silky, chewy. You can eat this wine. 45+ seconds finish.
Mesmerizing.

Strong notes of leather on the nose. The wine is powerful from the moment it hits the palate. Huge notes of leather, earth, dark black and blueberry, with lingering notes of spicebox, and cloves through the middle and end of the palate. Lots of tannin still present, with very rigid structure. This was made to last a significant period of time. Can drink now but will only get better with age.

Bought a case of this and had to try one after a year. This juice is amazing. The nose is so enticing that I could not stop smelling this. Beautiful ripe fruits and oh so true to the Penfolds house style. We enjoyed this over 2 nights and it was a true treat. The finish just does not quit and really was the match to a perfectly cooked NY strip on the grill. Cannot wait to try subsequent bottles but will most likely wait another 5 years or so for the next! If you see this, buy it (if the price is right) and enjoy it!!!

I attended a Penfolds re-corking clinic, overseen by Chief wine maker Peter Gago, where they refilled my old bottles. They offered a taste of their refilling wine, which showed wonderfully. Ripe fruit, lots of eucalyptus notes, so typical of the 707 giving it a characterful taste and also some freshness. A really strong and balanced CavSav despite the volume it has due to the warm weather in SA. 96+

Holy $@&?! One of the best wines I've tasted in 2016. Subtle but seductive nose--not as overwhelming as a classic Napa nose but mesmerizing nonetheless. Chocolate, caramel and dark fruit on the palate. Unbelievably great finish. Unprecedented novocaine effect. The 2010 vintage is officially in my greatest hits collection. 99+ pts easy
Really liked this. Huge nose! Of course on the young side, but we're not complaining. Great, big body, too bad it was open so soon, would love to drink this in ten years.

2015 New York Wine Experience Trip; 10/19/2015-10/27/2015 (New York City, NY): A blend from old vineyards in Coonawarra and Barossa (including the Kalimna vineyard), this deep ruby bottling carries on the Penfolds 707 "house style." It is a deeply extracted wine which flaunts aromas and flavors of black bramble fruits, boysenberries, espresso, pickling spice and lavender. With fresh acidity, big sweet tannins and nicely integrated alcohol, it sings on the mid-palate and seems to last forever on the iron-laden finish. This is simply stunning Cabernet that will have significant longevity. Drink now-2030.

Penfolds Tasting (Bin 75): Only a drop but what I could tell was this wine commands your attention, much more deep structured and powerful than the 407 for sure; high quality Cabernet that could drink well for 20+ years.

Cabernets at their best (8 Danks street, Sydney): medium plus intensity expensive oak - toasted vanilla, very polished wood here, then very ripe black fruit - currant - concentrated beefy notes, spice, smells quite Napa. Minty hints as well. In the mouth the wine has chewy chunky chocolate and ripe back fruit, big mouthfeel: broad on the palate, beasty , a massive wine...not for me, well, not for me today. but another day and I'd be all over this like a rash!

Cassis, blackberries, cedar, with vanillin oak overarching. Lovely and lifted nose. Startlingly full bodied, powerful yet with good definition, structurally excellent with powerful tannins coupled with appropriate acidity, length to burn.

Aussie night!!! (J&B Cellar): Tasted blind alongside three other great wines. My blind notes: Young, purple in glass. No bricking. Classic cab nose - cassis, dried fruits, cardamom. So BIG yet so smooth in the mouth. Firm but pleasant tannins. long finish. Rated 2/4 in this flight.
