A wine in its best drinking spot right now, but with some peak years still left in it. It did not change very much over the course of a couple hours. I rate the nose a 95 as it was a potpourri of flower petals, rinds and skins of various citrus and stone fruits resting on a pile of white stone. On the palate it was largely the same but with a bit more chalk and stone than sweet fruits. Definitely a wine that shows best with the right foods and an aged salmon proved perfect.

Open for several hours, this wine shows very little evolution over the course of time. Floral nose, very aromatic with hints of mint, lemon rind and lots of chalky flint. High acid palate, crisp lemon rind with chalky dry extract and minerals and tightly wound fruit packaged in a long finish. This is a seriously intense white burgundy at 10 years of age showing minimal evolution. The Chenevottes vineyard is adjacent and slightly up slope from the Montrachet vineyard, the texture of this wine is very Chevalier-Montrachet like in its structure and intensity, with the Chevy showing more volume and weight with a similar chalky texture.
Revisiting this wine after 24 hours, and it has gotten better. At room temperature the nose is still phenomenal showing chalky citrus fruit and flint. It has the texture of a red wine, austere and structured with a salty and chalky character.

Nose: jackfruit, caramel, white flower, popcorn, nutty Notes: very intense and rich aftertaste. Still very young right now and the color is still greenish. This is proper good wine as it gives you the fatty and intense nose yet the palate is quite light comparing to what the nose is showing. One thing I must say is not really my cup of tea would be the rather prominent minerality towards the end of the palate. I think this wine should show best in 3-4 years. Drink: 2027+ Rating: 90

My 40th birthday at 67 Pall Mall (67 Pall Mall): First of a case. Initially a very reductive nose of matchstick but with time this opens up wonderfully Deep rich palate that does a dance between well checked vanilla, lime oil, saline, yellow apple. Everything opens up in time to give great tension between rich flavours and good cutting acidity. Fantastic and can't wait to try more as this is just opening!

Peter's 1983 extravaganza (67 Pall Mall): A brilliant pale green colour, that looked tempting and surprisingly youthful. Thrilling, savoury, nose, that was almost as reductive as I expected - in other words, a lot, but happily not to the detriment of my enjoyment. Lots of lemon/lime on the palate, which was fairly one-dimensional but had notable mid-palate amplitude, superb tension and a long, long, long finish. PYCM smashed the 2014s, for sure.

Peter's 40th (67 Pall Mall, London): Colour was light yellow with more of a green tinge to it than the Dauvissat enjoyed alongside it. Initially the nose showed reduction and it was difficult to enjoy with underlying white and yellow fruits. I left the glass alone for 30 mins + and the wine really transformed, and better still after 1 hour / 1 hour 30 mins plus. Medium to full bodied, not particularly fruity, more minerally, yet there is power and concentration and mouth watering salinity and a never ending finish. The first PYCM that I have truly loved rather than admired or respected. From Zalto Montrachet.

PYCM 2014 are consistently clean and precise, tasted this blind and I was torn between Comtes Lafon and PYCM. Nice combination of attractive reduction and fragrant buttery oak toast. Chassange - Northside: Not as exciting as a bottle from two months ago as the reduction was more prominent and restricting on this bottle. As the reduction blows off, the palate reveals nice ripe orchard fruit with plenty of mineral and spice. Chiseling acidity. Upside as/if this sheds its reduction.

PNP. Fragrant nose of lemon rind, some florals, spice and the smoky/flinty PYCM signature. Deep and intense palate, lean and high acid with a lemon lime flavor profile and tons of structural elements on the long drawn out finish. Outstanding.
Day 2 update, softer and deeper palate, the acidity has receded compared to the fruit. Nose still shows flinty lemon PYCM goodness.

Blind 2014 / 2017 White Burgundy (Chez Winefool): Blind. Really attractive nose with intensity and complexity -- florals, minrals, spice, crisp orchard fruits. Deliciously round on the palate with orchard, tropical and citrus fruits and loads of mineral spice. Amazing tangy acidity that is seamlessly integrated with the fruit. Delicious now though this should hold for 5-10+ years. My 2/6, Group #3.

Another year, another bottle of PYCM's 2014 Chenevottes, which remains hugely reductive with dominating but appealing matchstick aromas intermediating intense lemon. Medium bodied, crisply textured, with concentrated flavors of white peach and lemon. Finishes with considerable length. I may finish all of my bottles before this is anywhere near peak.

Light golden color. Not as redactive as these wines typically are. Much more resolved than my last bottle. More tropical fruit in the nose. Pineapple and honeyed lemon, a touch of marzipan. absolutely singing / beautiful at our Xmas dinner with Nix's and Occh's... this was bright and citrusy with plenty of power and a hint of sweetness for balance... have been finding a bunch of wines with this profile from my '12 (and to a lesser degree - as was the case here - my '14) chablis... lovely and glad to have at least another couple bottles at home... winner winner chicken dinner

These continue to impress. High-test nose of matchstick reduction, lemon, apple, white flower, and crushed stone. A reductive minerality on the palate preludes apple and citrus flavors. The 2014 Chenevottes is hard to resist (my sixth bottle!) but best starting 2020.

QUIT drinkin this stuff! 5th bottle now of a case...I might have been lucky to get this one open now, as there is just the slightest of slightest hint of tca on the cork, but not in the wine just yet. More smoke reduction than the first bottles, but quickly integrates with the intensely bright and energized acidity...lemon and green apple skin tartness...crystalline and pureness...with a nice vanilla oak barrel creme and spice. Chalky limestone minerality showing that great texture and salinity...nuanced with exotic spice and match strike...pretty white/lime blossom florals rounding out the experience. GOT to get at least one of these to age 20! Will be amazing imo.

PYCM Chassagne Masterclass (Basement, 67 Pall Mall): Deeper and slightly dusty, herbal nose. Less upfront here, a relatively docile attack before a real mid-palate explosion of lime, minerality and a lovely line. Lots of energy. Very persistent, grippy mineral finish with fresh acidity. ****

Burgundy bottles drunk with lunch or dinner while in Burgundy; 11/20/2017-11/25/2017: Off the list at Caves Madeleine in Beaune. Pop n' pour and consumed over a nearly 4 hour dinner. This was so heavily reduced that it never came close to opening up. Matchstick is the dominant note over some underlying muted apple, peach and mineral. Palate is pretty lean and closed down. Some other 14 1ers drank this week were much more fleshy and generous (from B Moreau and Roulot). Should come around, but who knows.

Bright, pale yellow. Attractively-integrated but significant matchstick reduction renders this wine difficult to assess, but already its purity is evident, with crystalline notes of citrus, peach, and white flower. On the palate I find intense peach in a lightweight, crisp package that nonetheless delivers significant concentration and purity. The 2014 Les Chenevottes is likely PYCM's top Chassagne Cru. Drink starting 2020.

A very lean and laser focused nose of lemon citrus acidity as a baby. Needs aeration via decanting at this stage of life. Light golden straw color. No tinge of color at this point in time. PWTG 2014 Chassagne flight, 1st place out of 6 wines. Lovely nose, flint, citrus, rocky, dusty limestone and lemon. Richer texture than the PYCM Morgeots, but still very tight and citric with lots of acid and flavor replay on the medium long finish.

Such precise PYCM chsesilng,even in a young wine.Needed carafe for 30 minutes and then took another 20 minutes to warm up and display what it has: a tighter style for 2014, compared, for example, with PYCM St Aubin 1 ere that year, which is more of a buttery tone. Lots of citrus overtones, teased apart pineapple, honeysuckle, butterscotch (slight), smokey mineral melange in a very structured, sophisticated delivery.

Pure crystalline energy here! Pale yellow, green tinge color...reduction, lime blossom, chalk dust, lemon/lime, green apple nose. Precise and penetrating citrus acidity power washes the underripe(good tart) pitted orchard and citrus fruits...with that KILLER chalky limestone mineral salinity, smokey exotic match strike reduction(nuanced, not overpowering), pretty white flower blossom florals...finishing with an explosion of spicy acidity, and coating of oak creme and rainwater through smoke finesse! 2014 is the new 2010 for PYCM!

Mostly Côte de Beaune Whites and Reds (SF Wine Trading Company): Light yellow. Reduced. More elegant feel than either of the other 2 Chassagnes. Zesty lemon fruit and acidity, not the usual silky PYCM texture, but lively and penetrating. Sulfur stunts the finish and makes it more difficult to read and predict where it might be going.

Comes off a 50 year old vineyard. It has power with finesse. There’s a sweet heart of white peach fruit, some preserved lemon and a big sprinkling of salt to the finish.

This had been open 3 hours before serving, but decanting would have helped soften the reduction. Lean start with tart orchard fruit, bigger in the middle with a robust finish that was slightly bitter at first, but more air brought out more balance.

Bouquet: A bit reductive. No use of batonnage. Med+ intense w. butter, wood, matchstick, yellow fruits and warm spices.
Palate: Dry, med+ acid, med+ body. Matchstick, greenish, lemon confit, autumn leaves, butter and a creamy finish dominated by the acidity.

Big nose of matchstick reduction, lemon, mint, and crushed stone. Broad scale tart citrus and reductive minerality on the palate, effortlessly persisting off the finish. Impressive intensity and density. I'll drink all my bottles before then but the 2014 Chenevottes is best starting 2020.

These continue to impress. High-test nose of matchstick reduction, lemon, apple, white flower, and crushed stone. A reductive minerality on the palate preludes apple and citrus flavors. The 2014 Chenevottes is hard to resist (my sixth bottle!) but best starting 2020.

QUIT drinkin this stuff! 5th bottle now of a case...I might have been lucky to get this one open now, as there is just the slightest of slightest hint of tca on the cork, but not in the wine just yet. More smoke reduction than the first bottles, but quickly integrates with the intensely bright and energized acidity...lemon and green apple skin tartness...crystalline and pureness...with a nice vanilla oak barrel creme and spice. Chalky limestone minerality showing that great texture and salinity...nuanced with exotic spice and match strike...pretty white/lime blossom florals rounding out the experience. GOT to get at least one of these to age 20! Will be amazing imo.

PYCM Chassagne Masterclass (Basement, 67 Pall Mall): Deeper and slightly dusty, herbal nose. Less upfront here, a relatively docile attack before a real mid-palate explosion of lime, minerality and a lovely line. Lots of energy. Very persistent, grippy mineral finish with fresh acidity. ****

Some other 14 1ers drank this week were much more fleshy and generous (from B Moreau and Roulot). Should come around, but who knows.

Bright, pale yellow. Attractively-integrated but significant matchstick reduction renders this wine difficult to assess, but already its purity is evident, with crystalline notes of citrus, peach, and white flower. On the palate I find intense peach in a lightweight, crisp package that nonetheless delivers significant concentration and purity. The 2014 Les Chenevottes is likely PYCM's top Chassagne Cru. Drink starting 2020.

A very lean and laser focused nose of lemon citrus acidity as a baby. Needs aeration via decanting at this stage of life. Light golden straw color. No tinge of color at this point in time. Mouth filling flavors of the mineral laced citrus with a touch of oak on the tongue. This should age nicely. #ArchitecuralArtistry, #WineArchitect

PWTG 2014 Chassagne flight, 1st place out of 6 wines.
Lovely nose, flint, citrus, rocky, dusty limestone and lemon. Richer texture than the PYCM Morgeots, but still very tight and citric with lots of acid and flavor replay on the medium long finish.

Such precise PYCM chsesilng,even in a young wine.Needed carafe for 30 minutes and then took another 20 minutes to warm up and display what it has: a tighter style for 2014, compared, for example, with PYCM St Aubin 1 ere that year, which is more of a buttery tone. Lots of citrus overtones, teased apart pineapple, honeysuckle, butterscotch (slight), smokey mineral melange in a very structured, sophisticated delivery.

Pure crystalline energy here! Pale yellow, green tinge color...reduction, lime blossom, chalk dust, lemon/lime, green apple nose. Precise and penetrating citrus acidity power washes the underripe(good tart) pitted orchard and citrus fruits...with that KILLER chalky limestone mineral salinity, smokey exotic match strike reduction(nuanced, not overpowering), pretty white flower blossom florals...finishing with an explosion of spicy acidity, and coating of oak creme and rainwater through smoke finesse! 2014 is the new 2010 for PYCM!
