Maybe I’m just a sucker for these bubbles, but man do I adore them. Has the body to tell that it’s a BdN, solid acidity, and the frame to carry it without being flabby or juicy at all. Well damn done.

Out of its youthful exuberant phase now. Ripe orchard fruit and fermentation notes. Some caramel on the finish. A ripe version of this cuvee - wish there was a touch more verve. Curious how this will age...

Rich yeasty nutty orchard fruit nose. Quite ripe broad orchard fruit on the palate. Creamy texture. Racy acidity in support on the finish to balance. Tightens up with air, a ginger note emerges (although I seem to be detecting ginger in every champagne I drink at the moment!)

this bottle was roaring from the moment it was opened. The fruit is just so dense and strong, staying with you for minutes. This is drinking slightly heavier than the last bottle, but it works well.

This is much more giving in the fruit department than the previous bottle I had a couple of years ago. Though the frame was a bit tighter than I would have expected here (As the VV is typically a pretty fruit-forward Champagne when compared to Bouchard's other offerings), the grip relaxed quite quickly in the glass, offering red apple flesh, olive oil, ginger, bruised lemon, and wet stone notes. Medium intensity (much less driven and chiseled than a 2013 Pol Roger Churchill served next to it - and certainly less intense than a 2008 Cristal also at the table).
I think this 2018 VV is in a good spot, though I know it has the capacity to age. I don't see much need to recommend holding bottles for longer, especially seeing as how the vigor and potency here are primarily in the medium category. For me, I say pop 'em now and harness the freshness that is currently on display. It's quite the gulpable Champagne... though since the pricing has skyrocketed into the north side of Neptune, it's no longer your golfing grandpa's Sunday brunch Champ.

Pausing for the Cause 2022 (Part 2) (Chicago, IL): V18, disgorged April 2020. The ripe vintage shows so prominently here. At first, this was almost candied and overdone with the fruit and sweetness, so we decided to put the bottle away and come back to it a few hours later. By then, it had lost a lot of the overt sweetness and the palate tightened up quite a bit, but there was still an intense white grape note here from all the young, very ripe fruit. Not a very convincing bottle of Bouchard, for my taste.

Un millésime assez chaud ayant donné un vin différent dans ce millésime: très fruit mur, ample, le dosage est faible mais se compare quasiment à certains Champagne de grande maisons utilisant un peu plus le procédé. This is lovely stuff; shows the finesse of Bouchard with some of the opulence of the ripe year; the nose is lovely with orchard fruits, lemon zest, some minerality, a hint of lees; the palate is rich and yet lithe at the same time. Each sip demands another. Wish I had a case.

Floral citrus, fresh acidity and a finish that tickles your throat for a minute after drinking it. I love Bouchard's wines. There's a brightness and energy in this that just always lifts my spirits when I drink it.
Paired great with potato chips. A great end to an enjoyable night.

Dinner with the wine group (Zazie's, San Francisco): Lemon yellow; aromatic, citrus, minerals; palate is medium bodied, some slight richness but not brioche, quite fresh, lemon citrus, low dosage but not zero (not listed on label); finish is medium length. Very nice, clean and balanced, food friendly. 91-92 Day 2: Lost a bit of the bubbles as there wasn't much left in the bottle. Still excellent flavor and freshness with food, but by itself comes across as more simple than yesterday. Based on the showing yesterday, I think this is perfectly nice to enjoy now, though obviously it will evolve a bit with age.

In need of some air upon opening...the bubbles come shooting out...can't contain all that energy! Still spot on from my last note...as the pop rock explosion of bubbles calms, you get an amazingly primal and youthful, raw state Champagne...bursting with citrus energy, yet creamy and sensual in texture. The fruit...candied pineapple, red delicious, dried apple rings...is bright and full flavored...pillow soft ginger mousse caresses the citrus pucker...nuanced yeasty brioche, crushed limestone chalk...just a super balanced mouthful of goodness! LOVE these wines!
Wonderful aromatics of bruised apple over a chalky minerality that gave way to crisp, ginger, red apple and citrus flavors that echoed on the long nuanced finish.
Do yourself a favor and give it air.

Was looking forward to trying this. This was buzzing with chalk and minerals abound. As with the prominent producers from this area, the approach of making this as a wine first and foremost is evident. It delivers power with elegance, as can be expected from Cedric Bouchard. I am thoroughly enjoying this movement in champagne making.

Beautifully pure, but also vinous like these wines always are. Very pretty aromatics of ripe apples, pear, some citrus, also some flowery notes, as well as some sweet spices and some minerality and a touch of honey. It‘s medium-full bodied, with medium-high acidity balancing the richness and just very good mid-palate density, persistent without being heavy. Long finish with excellent freshness. A really great Val Vilaine and from my perspective year after year one of the very best grower‘s Champagnes in this price range. Too bad they are so difficult to find.

Dinner at AOC pop-up Tivoli (CPH): Dominated by Lemon, green apple, brioche and a little bread dough. Youthful. Clearly BdN and fuller bodied than Chardonnay. (I reecently tasted Cedric Bouchard's 2014 Bolorée BdB - så much better on my palate). Develops positively in the glass but remains youthful - found no tertiary notes right now. Disgorged april 20. Needs not less than app 5 years in the cellar

I'm pretty sure we drank the 2018, as while I could not find any etching or stamping on any of the glass or labels, I did see a raised "18" on the glass surface so that's my assumption. Caramel, strawberry, lime, with some austerity here and grip into the finish. This showed OK but will need some time or more aeration (which it did not get as it was 'open and pour') to even out some of the rough spots.

We took this along to a dinner with friends, and they served it with dessert (apple-rhubarb tarte tatin). This combination was so supremely felicitous that I'm inclined to permanently move champagne from the beginning to the end of the meal.
It would help, of course, if all champagnes were as well-balanced and lively and delicious as this one. High but tolerable acidity, perfect fine bubbles, medium body, intensity of flavor -- a pleasure to drink from the first sip to the last. (Am I being suggestibly shallow in thinking that the champagne does really smell and taste of roses?)

This needs a wee amount of cellar time in-bottle to fully come to its happy place. The flavors didn’t start to expand until the final sips after over an hour of air. Linear, with some red apple flesh and bruised lemon rind notes starting to emerge toward the end, but otherwise it lacks some personality right now. Try again in 2024+. 91+ points. Disgorged April 2020.
Vertical with this lovely clear salty aromas that rocks together with a little red fruit, smoke, wax, autolysis and nut. Pretty medium-bodied Champagne with this wonderful cripsy mouthfeel with fresh citrus, red fruit, grape, wax, cool yeast baking and again with this excellent sea minerality on a crumbly dry finish. Youthful but great Champagne.

Disgorged April, 2020. Dull medium yellow with light, fine mousse. Aromas of wheat and pear. Medium body, very creamy and textural. Dry (apparently no dosage) yet rich and not the least bit austere. A whiff of caramel, excellent acidity, and late soil. Just amazingly harmonious and "vinous" for such a young Champagne, especially one that is 100% Pinot Noir. Perhaps it lacks the backbone to last for ages, but this should drink wonderfully over the next decade. I was really taken with it.
On the second night, you get more black cherry Pinot fruit and more structure as well. Really promising and enjoyable at the same time.
Wow - I know this is the entry level wine, but it is glorious. Fruit, acid, balance, complexity - this is so good already - wonder how it'll be me with more age

Pop/Pour. initially full of rich ripe fruit. Pear, apple, and mixture of stone fruits. With air, it mellows out and the fruity acid starts to show up. Overall i could use a bit more acidity and freshness, but definitely a tasty bottle.

Stylistically a CB classic, high acid, energetic, chalky minerality that you can almost feel on the palate, white orchard fruit. Paired great with some fried chicken. Still very youthful and will likely gain some complexity and soften up with more bottle age.

Crisp, cut, energized to the nth bunny...yet such creme and sensual texture...very primal and youthful in a unique raw state for a Champagne...yet totally balanced and ready to cat walk! Impressive champagne! On the one hand wonderfully red-fruited (base vintage is superripe 2018) and an unusually dense mouthfeel, on the other hand lots of chalky minerality, purity, lift and a nicely refined perlage. More of everything, but very well put together! However, what is missing are the bready and yeasty elements which come with extended aging on the lees. Nonetheless a welcome change.

Paired with Lebanese food prepared by Chef Rafael from Craft Pita.

Pop/Pour. initially full of rich ripe fruit. Pear, apple, and mixture of stone fruits. With air, it mellows out and the fruity acid starts to show up. Overall i could use a bit more acidity and freshness, but definitely a tasty bottle.

Apples and orchard fruit. The palate has good acidity with notes of lemon rind, crunchy apples and peaches.

Stony, mineral driven nose with layers of lemon, green apples, and fresh herbs. Mouthwatering acidity, more lemon, chalk, and stone fruit on the palate. Long finish. Very much like an excellent white wine with tiny, delicate bubbles rather than a typical Champagne. 93+

Stylistically a CB classic, high acid, energetic, chalky minerality that you can almost feel on the palate, white orchard fruit. Paired great with some fried chicken. Still very youthful and will likely gain some complexity and soften up with more bottle age.

The best red delicious apple you've ever had! Crisp, cut, energized to the nth bunny...yet such creme and sensual texture...very primal and youthful in a unique raw state for a Champagne...yet totally balanced and ready to cat walk! Super tasty and open for biz...ginger and candied pineapple...dried apple rings...yeast brioche, crushed limestone chalk...has some red apple skin sours...PLUSH pillow soft mousse caresses the citrus twang...just gorgeous harmony for such a young wine! Can't believe how GREAT these wines are!

Impressive champagne! On the one hand wonderfully red-fruited (base vintage is superripe 2018) and an unusually dense mouthfeel, on the other hand lots of chalky minerality, purity, lift and a nicely refined perlage. More of everything, but very well put together! However, what is missing are the bready and yeasty elements which come with extended aging on the lees. Nonetheless a welcome change.

Little to young, this needs more time in the bottle! A touch of swethnes that I havent felt before, bottle was best day 3!
But... please remember that the expectations of this bottle is always so high when you open one of Cedric’s cuvee’s... 🥰

Searingly high acid. A touch of red fruits and a bit of savory on the nose. Nice mousse. Ultimately unbalanced and undeserving of the hype.
