Open up slowly, initially the wine was soft & light, but after 1.5 hours in the bottle, it turned into sometime special ... cheddar cheese, butter scotch & denser.

Quite a big white burgundy style . Rich full bodied and now low acid. Fruit is starting to dry out but the structure and framework is still there. Lovely long palate though this bottle would have been better a couple of years ago. Given the crappy corks in these Vat 1 , if you still have any drink up before it really drys up.

Last Tuesday Supper Club (One Penny Red, Summer Hill): Low intensity aromas of toast, butter, apple and a little cream. smells 'wet' with time it gets more open and generous though retains a similar profile on the nose. Medium plus acidity, apple over classic aged Hunter notes that are on the nose; toast, butter, cream, honey. Textured on the mid palate as well. Really lovely.

10 year Tasting of 2005 Vintage (Bronte, Sydney): lightly gold. lovely gently aged fruit, some honey and white bread toast, a hint of reduction. soft but with reasonable length. straw, honey, and a gently toasty flavour. good acidity. well aged but possibly past its best.

Some gold and honey. Gentle toasty, grilled nuts, lanolin. Med wt, quite some depth. Soft, fleshy, lemon-lime and lanolin, hay and toast, has great length and excellent acidity giving a cleansing finish. Very good depth of flavour. Appears quite youthfull.
