This is fascinating wine, would never think that one of the hottest Australian regions produce one of the lightest Semillon’s in the world, moreover they usually open up after 10 years and can easily age for 20, 30 years and more. Their secret is simple - early harvest and inert vessels for fermentation and maturation. Vat 1 is Australia’s icon Semillon. Vines planted from 1923. Pale lemon. Aroma of lemon, quince, beeswax, flint, toast, almonds. Vibrant & light, citrusy & flinty, high steely acidity, 10.5% abv.

Forgetting that I had tried this three months earlier: Medium Gold colour. Nose of lemons, apple and waxy element. Very full vibrant and fresh palate - so smooth and terrific balance. Lemon and grapefruit citrus elements lead with secondary and aged notes rounding out the palate. lively acidity and long pleasant finish. I may have opened it too soon as feel it has plenty of time to develop further. 10.5% alc

Restaurant bottle. Pop and pour over 1.5 hours. expectations always relatively low on ‘12 hunter semillons, but this is showing well. Lovely weight and mouthfeel, has a touch of salty salinity. The usual lemon/lime citrus and lemon curd sitting in front of the developed waxy/toastiness. Punching well for the vintage.

Medium yellow. Grassy and mineral nose with a hint of kerosene; light to medium bodied, bright lemon lime acidity, with only a smidge of toast development. Still needs another few years but think this is heading in the right direction. Loved it. Maybe it falls short in a vertical tasting, but on its own, a beautiful Vat 1. Another 5 years in the cellar before peak?
