  • Last bottle and best bottle. The slight sense of residual sugar went well with the spicy tomato swordfish tonight. A surprisingly good combination. This has an amazingly good earthy almond flavor. Slightly végétal at first but after decanting this disappeared. Rich, unctuous and complex.

  • This is still an odd Cotât Sancerre, but as long as you give it a few hours in the decanter (which i did) it is interesting, complex and challenging. A bit of reductive matchstick on first opening, which is another good reason to decant for a few hours, followed by the spinach notes and melon. Low acid and seems like some residual sugar here. But it is still very enjoyable to drink, and with the Persian chicken and rice tonight it was very good. I would drink this now with food.

    I saw an earlier note about tasting from Coravin and this highlights to me why this is deficient way to taste wine. If a wine requires an hour + decant to really shine I don’t see how Coravin is going to do it any justice. It is a great way to drink expensive wine by the glass at a restaurant as long as it is ready to drink PNP, but I don’t believe it is optimal for lots of situations.

  • This really is a fascinating wine. My third note including one scored an 81! I see the experience of others here is a lot of bottle variation but also I think this just does take time. This wine is transformed from even 18 months ago. It is still lacking for me in citrus and acid balance but this is a serious and very interesting wine - challenging even. It has a weighty mouth feel of moderate alcohol with a heavy mineral note which is pretty dominant. Quite viscous too. I did appreciate it as a wine - but not completely sure I really enjoyed it that much!
