Drouhin or whoever probably never thought for this wine to age for 11 years. Oh well. Its mushroom soup now, with tinges of honey, toffee, almond. Washed down by a pint of apple/pear cider. Interesting experience.

my first Chablis, nose more floral than I expected, some citrus, earthiness perhaps some mushrooms. Well balance, less acidity and crispness than typical Sauvignon Blanc, earthy minerality but still with citrus. Very nice drinking wine.

Paired with the chile relleno stuffed with mushroom duxelles at Cafe San Estevan in Santa Fe. (One of my top five appetizers in the whole world.) Captivating fruit nose blessed with a nice mineral component. Delicious food wine.
