  • Pale cerise.
    Nose relatively muted initially, cool, coniferous sous bois continues to to evolve and build, at the one hour mark complex, cacophonous floral scents, at 3 hours gingerbread, spice, umbeboshi, chinotto, from 5 hours meaty, gamey, evocative of freshly slaughtered duck, then coniferous again, with subtle wafts of a salty sea breeze limestone mineralite.
    The palate initially light and primary, red and pink fruited, strawberry, cranberry, pink grapefruit, herbaceous hints of tarragon, Morello cherry creeping in after an hour, but then at the 5 hour mark darker, myrtille and sloes. Citrusy acidity and fine but astringent tannin.
    Not really a seductive or hedonistic wine, more in the realm of academic intrigue, very much understated.

  • 1 hour slow-ox. Initially a sweet, almost jammy red berry fruit, but more subtle and cooler after a while. Adding hints of meaty flavours, hay and dried leaves, almost like walking through a forest on a windy autumn day. Later this quickly changed into a more fragranced, perfumed and floral dress ending with a darker, leathery finale.
    Fruit-forward, sour cherry palate with fine tannin and fresh acidity, all in good balance. Lightly structured with a solid length finish. Not super expressive nor intense, but with lots of slumbering complexity and finesse. More hedonistic than deep and intellectual. This doesn’t hit you from the first note like an AC/DC classic, think more of a master pianist playing Schubert. The versatility is astonishing and this is simply a lot of pleasure to drink. Paired with home-made Wiener Schnitzel, cranberry sauce and potato salad. worked very well.

  • Charming and accessible with fresh berry and cherry fruits that are sweet and luscious but maintain crunch. It is stony with a hint of meat and earth. Balance and proportion are impeccable and the finish is fine, minerally and persistent.

  • 20 minute decant and this is ready for business. Very pretty enveloping nose of red cherry, herb. The palate is seemless and silky with great balance and integration Ripe red cherry, raspberry, soft earth, touch of spice flavors.. Medium bodied but not yet showing much complexity. This is irresistible now but should improve over the next ten years although I am not sure it’s a very long ager.
